Chicken Strips: Chicken + Yogurt, What?
So for a while now I've been hearing about how amazing yogurt sauces are, but have never actually taken the time to make one. Last week made an attempt to concoct a cultural hodgepodge only a poor, but handsome, college student would think of. In my head I was thinking, Indian cuisine uses yogurt based sauces, what if I made some curry breaded chicken to go with a sriracha yogurt sauce. Ingenious right? I thought so too!
To be really frank, I like to eye my ingredient amounts, and most of the time it's just season to taste but I'll try to estimate the amounts. I didn't really take pictures of the process, but next time I make it I will update with photos. I hope you enjoy!
Ingredients for the chicken:
4 chicken tenderloins
salt and pepper to taste
flour as needed
1 egg
about 1 cups Japanese style Panko breadcrumbs
2 Tbs curry powder
Directions for chicken:
*optional* put 2 tsp of butter in a pan, and lightly toast bread crumbs until golden over medium flame
salt and pepper the chicken lightly
dredge chicken with curry powder
dredge with flour
beat the egg in a bowl and coat chicken with the egg
pour breadcrumbs into bowl and place coated chicken strips in bowl.
thoroughly coat the chicken in breadcrumbs
place foil on baking sheet and lightly oil
place in oven at 375 F for 20 min
after 20 minutes, flip the chicken and place back into oven for another 20 min at 375 F
Ingredients for the sauce:
3/4 cup Greek yogurt
salt and pepper to taste
1-2 Tbs Sriracha
1/2 teaspoon of honey
pinch of ground ground cardamom
1 Tbs garlic powder
Directions of sauce:
add yogurt, honey, and Sriracha in a small bowl/ramekin and mix until pink
add pinch of cadamom, and garlic powder and mix again
salt and pepper to taste
Clean up:
I used a toaster oven, which I find to be the best invention ever made. The foil literally prevents any messes, so after everything is cooked just take the foil off the tray and throw it away. The bowls used to dredge can all be easily washed while waiting for the chicken to cook.
